Sushi

Sushi is a Japanese food consisting of cooked vinegared rice sushi-meshi (sushi rice) combined with other ingredients (neta), usually raw fish or other seafood. Neta and forms of sushi presentation vary widely, but the ingredient which all sushi have in common is vinegared rice. The rice is also referred to as (shari) and "sumeshi" (vinegared rice).

500 grams sushi rice
250 grams tuna fillet or tuna steak
250 grams salmon fillet
2 tablespoons mirin ( a kind of rice wine, but with a lower alcohol content and higher sugar content)
3-5 tablespoons rice vinegar
1 tablespoon sugar
1 teaspoon salt
2 teaspoons mayonnaise
1 teaspoon sesame oil
15 grams nori
15-20 grams wasabi paste (Japanese horseradish)
soy sauce
