Ayam bakar Taliwang is a great chilli chicken BBQ.

Sambal Taliwang is native to Taliwang, a village near Mataram, Lombok Island, and is made from naga jolokia pepper grown specially in Lombok, garlic and Lombok shrimp paste. A kilogram of naga jolokia pepper is extracted, ground and pressed. This is mixed with ground garlic and shrimp paste, then cooked with vegetable oil.

Bahan-bahan

1 daging ayam utuh
1/2 jeruk nipis/limun
1-2 bawang bombai
4-6 siung bawang putih
cabe (atau cabai), takaran sesuaikan selera
1 sendok makan garam
3 biji kemiri
5-8 gram terasi
1 tomat
100 mililiter santan
30 gram gula merah (atau gula Jawa)
3 sendok makan kacang tanah
200 gram kangkung
200 gram tauge (atau kecambah kedelai)
2-3 sendok makan minyak goreng
