Sambal goreng teri petai

Sambal is a condiment that has a chili-based sauce. Sambals are popular in Indonesia, Malaysia, Singapore, the southern Philippines, South Africa and Sri Lanka, as well as in the Netherlands and in Suriname, through Javanese influence. Typically made from a variety of chili peppers, it is sometimes a substitute for fresh chilis and can be extremely spicy for the uninitiated. Sambal goreng teri petai is a mixture of red chilli, garlic, shallot, salted ikan teri (anchovy) and petai green stinky bean as the main ingredients.

100-150 grammes de anchois séchés
100-150 grammes de petai (ou parkia speciosa)
1 oignon ou oignon rouge
2 gousses d'ail
piments rouges, à sa guise
1 tomate
1 petit cuillère de sel
1 petit cuillère de sucre
4 cuillères à soupe de huile alimentaire
oignons frits
