Green Hainanese chicken rice

Hainanese chicken rice is a dish of Chinese origin, and is most commonly associated with Hainanese, Malaysian and Singaporean cuisines, although it is also popular in Thailand. It is based on a well-known Hainanese dish called Wenchang chicken, due to its adoption by the Hainanese overseas Chinese population in the Nanyang area (present-day Southeast Asia).

1 whole chicken
300-500 grams of rice
2-3 centimeters of ginger
2-3 centimeters of galangal
1-2 lemon grasses
2-3 bay leaves
1-1,5 tablespoon of salt
1 onion or red onion (or purple onion)
7-9 garlic cloves
2-3 scallions (or green onions)
2-3 tablespoons of spinach puree
1 teaspoon of sugar
chili sauce (or pepper sauce)
3 tablespoons of cooking oil
1-2 limes
soy sauce
sesame oil
