Ingredients

200 grams of yardlong bean (or Chinese long bean) (substitute: green bean)
150-200 grams of white cabbage
150-200 grams of water spinach, optional
100 grams of soybean sprouts
1 cucumber
2-3 pieces of tofu (bean curd)
3-5 eggs, optional
100 milliliters of vegetable stock
250 milliliters of coconut milk
200 grams of peanut
30 grams of palm sugar
2 tablespoons of sweet soy sauce
chili peppers, at will
1-2 centimeters of galangal
4 garlic cloves
1/2 red onion (or purple onion)
1 teaspoon of salt
1 lemon grass
2-3 kaffir lime leaves
cooking oil, for deep-frying
potatoes, optional
shrimp crackers, optional
fried onion (or fried shallot)
