Ayam bakar Taliwang

Ayam bakar Taliwang is a great chilli chicken BBQ.

Sambal Taliwang is native to Taliwang, a village near Mataram, Lombok Island, and is made from naga jolokia pepper grown specially in Lombok, garlic and Lombok shrimp paste. A kilogram of naga jolokia pepper is extracted, ground and pressed. This is mixed with ground garlic and shrimp paste, then cooked with vegetable oil.

1/2 lemon
1-2 onions
4-6 garlic cloves
chili peppers, at will
1 tablespoon of salt
3 candlenuts
5-8 grams of shrimp paste
1 tomato
100 milliliters of coconut milk
30 grams of palm sugar
3 tablespoons of peanut
200 grams of water spinach
200 grams of soybean sprouts
2-3 tablespoons of cooking oil
